Dancing Goat Distillery is Wisconsin's largest craft distillery, founded in 2016 and located at 909 Vineyard Drive in Cambridge, Wisconsin, approximately 20 miles east of Madison. Operating from a 34,000 square-foot facility with four stills and over 7,000 barrels aging on-site, Dancing Goat is home to the state's first open-air Kentucky-style brickhouse rickhouse—an ambitious investment that signals the distillery's long-term commitment to aged American whiskey.
The distillery's flagship whiskey is Limousin Rye, a double-barrel finished rye whiskey aged in once-used bourbon barrels for six-plus years before finishing in a French Limousin oak solera system. The standard expression is bottled at 46% ABV with a mash bill of 51% rye, 45% corn, and 4% malted barley. Limited releases have included an 11-year Limousin Rye at 124 proof and a 10-year Cherry Port Finished variant, demonstrating the distillery's capacity for extended aging.
Dancing Goat's broader portfolio includes a 12-year Oat Bourbon, a 10-year Double Oaked Sorghum Bourbon, and branded releases under the Deaths Door Gin label—a well-known Wisconsin gin brand that the distillery has taken on. The distillery also produces Travis Hasse pie liqueurs and a range of specialty spirits that change with the seasons.
